Roasted Corn & Jalapeño Salsa

Each summer our menu changes a bit…like many, we take advantage of the fresh vegetables and local produce available during the too-brief summer we have in the northeast.

One of our family favorites is Roasted Corn & Jalapeño Salsa. Its a simple, delicious recipe that we make several times every summer.

 

 

Roasted Corn & Jalapeño Salsa

Roasted corn and roasted jalapeños work well together for a savory and spicy twist on a classic salsa.
Ingredients
  • 1 ear of corn, shucked
  • 1 tomato, diced
  • 1 small red onion finely diced
  • 1 jalapeño
  • 7 strands or 1/4c of cilantro, stems removed, leaves chopped
  • 1 lime, juiced
  • extra virgin olive oil or green chili infused olive oil
Instructions
  1. To roast the corn and jalapeño, brush with olive oil and add salt and pepper, roast on a grill until you start to get char marks on the corn and it is just cooked. The skin on the jalapeño will start to blister a little bit
  2. Once charred and cooled, using a sharp knife, remove kernels from the ear of corn by standing it on end and cutting top to bottom, the kernels will come off in a “sheet” which will break apart when you mix it with the rest of the ingredients
  3. Finely chop the jalapeño, if you leave in all of the seeds you will get more heat, if you want to control the heat a bit, remove the seeds and add some back as needed
  4. Gently mix tomato, onion, corn, jalapeño, cilantro and lime juice in a bowl
  5. Add salt and pepper to taste
  6. Drizzle1-2T of olive oil and mix again
  7. Serve with tortilla chips, eggs, seafood and/or avocado, over grilled chicken and even on baked potatoes

You can make the salsa as spicy as you’d like by adding more jalapeño. We always start with one and add more if we think it needs it. If you are making this for a larger group the ratio of corn to tomatoes is 1:1.

  1. Yum! That sounds delish and I love how simple it is to make. I’m going to pin it! We tend to eat a lot of mango salsa in the summer. We’re headed to a bbq next week and I’m going to bring this!

    • Thanks NJ. Let me know how it turns out! I’ve made pineapple salsa but not mango, I’m going to have to try it – our kids LOVE mango. I wish it wasn’t so tedious to cut.

    • I love that your son loves to make guac! My daughter asks for it all the time but hasn’t made it yet, I’ve got to get her on that. Do you go to Costco? Did you see the $16 guacamole mortar and pestle bowls – just like in the restaurants? Send me a PM, if you don’t have/go to Costco I’ll get you one. They are cool.

    • I used to be a cilantro hater, but I grew out of it. I remember watching Bobby Flay on Boy Meets Grill – he would say, “If you don’t like cilantro, try it again” and I would talk back to the tv – I don’t like cilantro Bobby. But I kept trying – and now I’m a fan. I don’t think you can overcome super tasting though so I’m sorry you have to miss out on such a unique herb.

    • Thanks Michelle, and I totally am. I had it in mind when I posted this recipe. I went through my measly recipe offerings and was ashamed. Consider this my first of many summer food posts.
